Piri Piri Chicken with Peppers

Piri Piri Chicken Recipe

  • 2 Chicken Breasts (Cut into small cubes)
  • 1 Large Onion
  • 2 Peppers (Mixed Colour)
  • 1 Garlic Clove
  • 1 Small Tin Of Sweetcorn
  • 1 Jar of Piri Piri Cooking sauce 500g
  • Salt & Pepper to taste

STEP 1

Chop the onion and peppers into 1 inch/2cm cubes.

STEP 2

In a small casserole dish, combine the chicken, onion, peppers, garlic cloves and cooking sauce.

STEP 3

Place the dish on the low tray and cook at 200C for 20 minutes stirring at regular intervals.

STEP 4

If there are signs of the meet browning too quickly, cover with foil.

STEP 5

Add the sweet corn, salt, pepper and stir well. Then rase each breast to top of the vegetables, allowing them to crisp and brown. Cover with foil once golden.

STEP 6

Continue cooking for a further 23-30 minutes until done.

STEP 7

Ensure the chicken is cooked throughout, serve and enjoy.
