- For the mac and cheese:
- 150g macaroni
- 150g mature cheddar, grated
- 80ml whole milk
- ½ tsp garlic powder
- ¼ tsp salt
- 1/8 tsp mustard powder
- For the bites:
- 2 eggs
- 120g breadcrumbs
- 75g parmesan cheese, grated
- ½ tsp salt
STEP 1
Cook the macaroni according to the packet instructions. Ideally, you want the macaroni to be a little al dente. Drain and set to one side.
STEP 2
In a pan, combine the milk, garlic powder, mustard powder, and salt. Cook over a high heat, whisking continually. Once it reaches a boil, add the cheese.
STEP 3
As the cheese begins to melt, add the pasta. Keep stirring until the cheese is fully melted.
STEP 4
Pour the mac and cheese into a sealable container and place it in the fridge. It’s best to leave it overnight, but it should be refrigerated for at least 8 hours.

Slice up the chilled mac and cheese into small cubes – around 1 inch is a good size.

In a small bowl, whisk up the eggs. On a plate, combine the Parmesan, breadcrumbs, and salt.

Dip each cube of mac and cheese in the egg and then gently roll in the breadcrumb mixture until fully coated.
STEP 9
Place up to 8 bites in your air fryer basket, then fry for 8 minutes. Repeat until all your bites are ready.
