- 4 cups cooked rice
- 4 breaded Chicken Cutlets
- 3 medium onions, sliced
- 1 medium potato, diced
- 2 medium carrots, sliced
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 3-inch ginger piece, peeled and finely chopped
- 1 2/3 cup coconut milk
- ½ cup water
- 2 tsp maple syrup
- 1 tbsp curry powder
- ½ tsp turmeric
- salt, to taste
STEP 1
In a pan or skillet, heat the olive oil. Add onions, carrots, and potatoes and sauté for about 5 minutes until the onions are soft and the vegetables start changing colour.
STEP 2
Add garlic, ginger and cook for a few seconds. Add curry powder and turmeric and stir.
STEP 3
Pour coconut milk and maple syrup along with water and bring the mixture to a boil.
STEP 4
Reduce the heat to let it simmer for about 20 minutes or until the sauce thickens up.
STEP 5
Meanwhile, cook the breaded chicken fillets in oil until they are golden brown and cooked through.
STEP 6
Once the gravy is ready, you can either serve it as it is or blend using a hand blender to emulsify everything.
STEP 7
In serving bowls, add rice, pour gravy on the side and serve with sliced chicken fillet. Enjoy.
