  • 250g dried rigatoni
  • 2 large courgettes
  • 3 tbsp olive oil
  • 1 garlic clove, peeled and chopped
  • Handful of fresh basil lives, roughly chopped

STEP 1

Boil water in a large pan, add salt, and then tip in the pasta. Cook until al dente – follow the instructions on the packet.

STEP 2

While the pasta is cooking, trim the ends off the courgettes then cut them in half before chopping into thick slices. In a large pan, heat the olive oil and then add the garlic. Fry the garlic for a minute or so, then add the courgettes. Fry for 3-4 minutes over a high heat.

STEP 3

Drain the pasta and then add the courgettes and the basil leaves. Season with salt and black pepper to taste.
