Chilli and Lime Grilled Butterfly Chicken

Sweet English Chicken Recipe

  • 4 butterflied chicken breasts
  • 3 tbsp. chilli powder
  • 2 tbsp. olive oil
  • 1 lime – juice and zest
  • 4 garlic cloves
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin


Grab a medium-sized bowl and place in the zest, olive oil, chilli powder, cumin, coriander, lime juice and finely chop your garlic and add this in too. Then mix thoroughly.


Place the chicken breasts in the bowl with the marinade and give it a good mix, covering the chicken evenly with the marinade that you have made.


Cover the bowl with cling film and place into the fridge. Leave to marinate anywhere from 2 hours to overnight if you have the time. The longer you leave the chicken to marinate, the more intense the flavour will be.


After your chicken has marinated, remove from the fridge 15 to 20 minutes before grilling to allow it to warm up to room temperature.


Heat your grill and cook for up to 10 minutes on the maximum setting, depending on thickness.
