Grilled Veggie Quesadillas With Pesto

  • 4 tortillas
  • 4 tablespoons pesto
  • 1 courgette sliced
  • 1 eggplant, small, diagonally sliced
  • 1 red bell pepper, quartered
  • 1 red onion small, sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • Ground black pepper
  • 166g grated cheese
  • 2 teaspoons butter
  • Chopped parsley


Place vegetables on a large platter, drizzle with two tablespoons of olive oil and season with salt and pepper.


Lightly oil and heat your Swan Stealth Smart Grill. Grill vegetables, turning frequently, until tender and slightly charred. This should be around four minutes for the onion and seven minutes for the eggplant, courgette, and red bell pepper.


Transfer vegetables to a cutting board and let them cool for about five minutes. Then chop.


Lightly oil your grill and heat to a medium-high heat. Lay on a tortilla, then build the quesadillas by spreading 1 tablespoon of pesto, then some grated cheese on the tortilla, and add the vegetables. Sprinkle a little more grated cheese and top with a second tortilla.


When the tortilla is golden, carefully flip the quesadilla to the other side. Continue cooking until the second side is golden. Repeat with the remaining tortillas and fillings. Cut each quesadilla into wedges and serve.
