
- 6-8 squid tubes, depending on size
- 10g Szechuan peppercorns
- 10g Black peppercorns
- 10g White peppercorns
- Squeeze of lemon
- Sea salt
STEP 1
Wash squid thoroughly and remove anything inside of the centre of the squid.
STEP 2
Grab a sharp knife, slice down one side of the tube and open till you have one large piece of squid.
STEP 3
Use the other side of this knife and lightly scrape the skin of the squid checking if there is any membrane still there.
STEP 4
Score the inside of the squid and place on some kitchen paper to dry out for a little bit.
STEP 5
Grab the peppercorns and salt and blend together in a small blender or crush using a pestle and mortar, before spreading this over the squid.
STEP 6
Heat your grill to maximum and place the squid inside for 5-6 minutes.
STEP 7
Add your lemon just before serving to get that extra flavour!
