- 350 g linguine pasta
- 300 g raw prawns, peeled and deveined
- 1 ½ tbsp olive oil
- 4 shallots, diced
- 4 cups tomatoes, chopped
- 2 garlic cloves, minced
- 1-inch ginger piece, peeled and grated
- 1 cup flat-leaf parsley, chopped
- ¾ tsp chili flakes
- salt, to taste
STEP 1
In a large skillet, heat oil. Add shallots and cook for a minute or two.
STEP 2
Add minced garlic, ginger, and red chili flakes and cook for a minute or two until fragrant.
STEP 3
Next, add chopped tomatoes and cook at medium-low heat for about 20 minutes until the tomatoes are saucy. Stir occasionally.
STEP 4
Meanwhile, health water in a large pot and season it with salt. Once it starts to boil, add pasta and cook it for 8 minutes or until al Dante. Drain, run cold water over it, and set it aside.
STEP 5
Once the tomato sauce starts to thicken up, add shrimps and chopped parsley. Mix well and let it cook until the shrimps turn pink.
STEP 6
Add cooked pasta, toss well so that the sauce covers the pasta. Serve.
