- 4 large eggs
- 225ml milk
- 250g plain flour
- 400g sugar
- 110g butter
- 2 tsp baking powder
- 2 tsp vanilla extract
- ¼ tsp salt
STEP 1
Preheat your oven to 190C (Gas mark 5).
STEP 2
In a bowl, combine the flour, baking powder, and salt.
STEP 3
In a separate bowl, beat the eggs for 4 minutes.
STEP 4
Keep beating until the eggs are thickened and then gradually add the sugar. Continue to beat for another five minutes or so, until the mixture is light and fluffy.
STEP 5
Add the flour mixture to the eggs and sugar, then continue to beat on a slow speed. Stir in the vanilla extract.
STEP 6
Combine the milk and butter in a saucepan over a medium heat. Keep it on the heat until the butter has all melted. Then, add to the batter and beat again until it’s fully combined.
STEP 7
Pour the mixture in a greased 9” baking tin and bake for 30-35 minutes. To check if it’s done, insert a toothpick into the centre – if the cake is cooked, it should come out clean.
