How to make honeycomb: Melt-in-the-mouth recipe

  • ½ cup granulated sugar
  • 2 ½ tbsp light corn syrup
  • 2 ½ tbsp water
  • 1 ¼ tsp baking soda
  • Icing sugar for dusting

STEP 1

In a heavy-bottomed medium saucepan, pour water. Add sugar and corn syrup. Place the saucepan over medium heat and let the sugar dissolve. Stir constantly.

STEP 2

Bring the mixture to a boil. Once it starts to boil, stop stirring and place a candy thermometer in the saucepan. Attach it in such a way that it doesn’t touch the bottom of the pan.

STEP 3

Let the mixture cook until it reaches 300 degrees F. Once it happens, remove the saucepan immediately from heat and add baking soda to it. You will see the mixture bubbling up. Stir the mixture until the baking soda is well combined. Make sure you don’t over stir it.

STEP 4

Once the mixture stops foaming up, pour it into a parchment-lined square pan. Let the mixture cool down for about 2 hours.

STEP 5

Once it is completely cool, take it out of the pan and, using a sharp knife, divide it into equal pieces. Dust icing sugar on top and enjoy.
