- 1 cup red kidney beans, soaked overnight
- 1 cups long-grain rice, uncooked
- 1 cup chicken stock
- ¼ cup white onion, chopped
- 1 scallion, finely chopped
- 1 garlic clove, minced
- ½ scotch bonnet pepper
- 2 cups water
- ¼ cup coconut cream
- 1 tsp fresh thyme
- ¼ tsp ground allspice
- ½ tsp brown sugar
- ½ tsp black pepper
- ¾ tsp salt
STEP 1
Rinse the red beans twice and drain them.
STEP 2
Pour water chicken stock, coconut cream, and beans into a large pot. Place the pot over medium heat.
STEP 3
Bring the mixture to a boil. Once it starts to boil, reduce the heat to low and let it simmer for about 1 ½ hour or until the beans are tender.
STEP 4
Add onions, garlic, scallions, allspice, thyme, scotch bonnet, rice, brown sugar, salt, and black pepper.
STEP 5
Mix and bring the mixture to a boil. Reduce the heat and cover the pot. Let it simmer for about 25 minutes or until the rice is tender and the water evaporates.
STEP 6
Serve hot.
