Mushroom soup Recipe

  • 500ml water
  • 1 x chicken stock cube
  • 200g mushrooms (finely chopped)
  • 100g onion (finely chopped)
  • 1 tsp thyme
  • 1⁄4 tsp black pepper
  • 1 tbsp olive oil
  • single cream

STEP 1

Remove the lid from the blender jug and make sure the screen is in place.

STEP 2

Add 500ml of water to the jug.

STEP 3

Finely chop the mushrooms (a food processor or mini chopper is ideal for this).

STEP 4

Remove 50g of the chopped mushrooms and sprinkle them into the jug OUTSIDE the screen.

STEP 5

Finley chop about 100g of onion and put it into the jug inside the screen.

STEP 6

They should come about 1/3 of the way up the screen. Break up the stock cube and add to the inside of the screen.

STEP 7

Add the dried thyme and black pepper.

STEP 8

Fill the remaining space in the screen with the chopped mushrooms.

STEP 9

Add 1bsp of olive oil on the top.

STEP 10

Select SMOOTH preset.

STEP 11

Serve with swirl of fresh cream added to bowl.
