Rabbit In Mustard Sauce

Slow Cooker Rabbit In Mustard Sauce Recipe

  • 1 rabbit, approx 1kg in weight
  • 250g streaky bacon, cut into small pieces
  • 4 onions, finely sliced
  • 500ml chicken stock
  • 150ml white wine
  • 1 bay leaf
  • 1 dessert spoon dijon mustard
  • 60ml double cream
  • 25g soft butter
  • 25g flour

STEP 1

Lightly fry the bacon until just coloured.

STEP 2

Transfer to the Swan Slow Cooker bowl.

STEP 3

Place rabbit on top of the bacon.

STEP 4

Gently fry onions until soft and add to bacon and rabbit.

STEP 5

Add the stock, wine, mustard and bay leaf.

STEP 6

Cook on HIGH for 6 hours, on LOW for 8 hours or on AUTO for at least 6 hours.

STEP 7

When the rabbit is cooked, mix the softened butter and flour to make a paste and stir into the sauce with the cream.

STEP 8

Cook for a further 10 minutes.

STEP 9

Garnish with chopped parsley and serve.
