
- 1 tsp Avocado Oil
- 1 Red Potato, small
- 1 1/2 cup Cauliflower, raw, chopped
- 2 Red Peppers, roasted
- 1/2 Onion, raw
- 1/4 tsp Sea Salt
- 1/8 tsp Black Pepper, ground
STEP 1
Grab a medium-sized pan and add some avocado oil.
STEP 2
Place the pan on medium heat.
STEP 3
Add the onions to the pan and sauté for around 4 minutes.
STEP 4
Add the potatoes and cauliflower and sauté for a further 5 minutes. Set aside and allow the mixture to cool.
STEP 5
When cooled, add the mixture and the remaining ingredients to your blender and blend until smooth.
STEP 6
Transfer the blended soup into a pot and heat over the stove until piping hot.
STEP 7
Curl up on the couch and enjoy!
