Strawberry & Mango Bircher Muesli

Bircher Muesli Recipe

  • 400g strawberries, hulled, plus extra to serve
  • 2 mangos, peeled, stoned and flesh removed
  • 300g jumbo oats
  • 1 apple, cored and grated
  • 260ml milk, dairy, almond or rice
  • 60g pumpkin seeds, plus extra to serve
  • 1 lemon, zested
  • 1 tbsp maple syrup
  • 400g yoghurt, Greek, coconut or soy

STEP 1

Place the 400g strawberries and most of the mango into a food processor and blitz until completely smooth.

STEP 2

In a large bowl combine together the fruit puree with the remaining ingredients.

STEP 3

Cover and leave to soak for at least 3 hours or overnight in the fridge.

STEP 4

When ready to serve, divide between bowls with the remaining mango, strawberries and pumpkin seeds scattered over.
