
- 1 tbsp Coconut Oil
- ½ Onion, raw – chopped
- 1 tsp Ginger Root, fresh – grated
- 2 Garlic, clove – minced
- 2 Sweet Potatoes, raw – diced
- 4 cups of Vegetable Broth, low-sodium
- 1 tsp Thyme
- 1/2 tsp Cayenne Pepper Powder
- 1 tsp Sea Salt
- 1 tsp Orange Zest
STEP 1
Heat the coconut oil in a large saucepan and add the onions, sauté for around 2 minutes.
STEP 2
Next add the ginger and garlic and sauté with the onions until soft – around 5-6 minutes.
STEP 3
Add sweet potatoes, vegetable stock, cayenne pepper, thyme, and salt and mix together in the pan. Increase the heat to high and bring to the boil.
STEP 4
Reduce the heat to medium, cover the pan with a lid and cook for 25 minutes, or until the potatoes and nice and soft.
STEP 5
Remove from the heat and allow all the ingredients to cool completely to room temperature.
STEP 6
Once cooled, add the ingredients to the blender and blend until smooth. Transfer the soup into a pot and heat over the stove until warm.
STEP 7
Pour into bowls and add a little orange zest before serving and enjoy!
