Sweet Potato Bisque With Orange Zest

English Creamy Potato Soup Recipe

  • 1 tbsp Coconut Oil
  • ½ Onion, raw – chopped
  • 1 tsp Ginger Root, fresh – grated
  • 2 Garlic, clove – minced
  • 2 Sweet Potatoes, raw – diced
  • 4 cups of Vegetable Broth, low-sodium
  • 1 tsp Thyme
  • 1/2 tsp Cayenne Pepper Powder
  • 1 tsp Sea Salt
  • 1 tsp Orange Zest


Heat the coconut oil in a large saucepan and add the onions, sauté for around 2 minutes.


Next add the ginger and garlic and sauté with the onions until soft – around 5-6 minutes.


Add sweet potatoes, vegetable stock, cayenne pepper, thyme, and salt and mix together in the pan. Increase the heat to high and bring to the boil.


Reduce the heat to medium, cover the pan with a lid and cook for 25 minutes, or until the potatoes and nice and soft.


Remove from the heat and allow all the ingredients to cool completely to room temperature.


Once cooled, add the ingredients to the blender and blend until smooth. Transfer the soup into a pot and heat over the stove until warm.


Pour into bowls and add a little orange zest before serving and enjoy!
