  • 1 loaf of sourdough bread
  • 200g cherry tomatoes
  • 1 garlic clove
  • A handful of fresh basil leaves
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar

STEP 1

Slice the bread and toast on a griddle pan – or use your Swan Stealth Smart Grill.

STEP 2

Rub each slice of toast with the garlic clove and drizzle with the olive oil – try to use about 1 tbsp in total.

STEP 3

Chop the tomatoes and add them to a bowl with the basil leaves, the rest of the oil, and the balsamic vinegar. Toss thoroughly and serve the mixture on top of the toasted sourdough with some ground black pepper.
