  • 180g rolled oats
  • 1 banana, ripe
  • 1 egg
  • 250ml almond milk
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp salt

STEP 1

First, add the rolled oats to your blender. The Swan Stealth Personal Blender is a great, versatile choice – it’s not just useful for taking your shakes and juices with you on the go, but also works perfectly for recipes like this.

STEP 2

Blend the oats until they form a fine, flour-like powder.

STEP 3

Add the remaining ingredients and blend again. The ingredients should be fully combined but don’t blend them too much – remember, you’re aiming for a batter-like texture.

STEP 4

Leave the mixture to rest for a few minutes to allow it to thicken.

STEP 5

Heat some butter in a pan over a medium-low heat. Pour in however much batter you need to form pancakes of your preferred size. You can cover the whole of the pan if you like bigger pancakes, or just add a little for smaller ones.

STEP 6

Once bubbles begin to form on the top of the pancake, flip it over. Fry until each side is golden brown.
