Mini Egg Braid Slice

The perfect Easter baked treat from @squashedpickle. 🌸🌼

Ingredients:
Mini Egg Chocolate Bar
Puff Pastry Dough
One Small Egg (egg wash) or Milk
Mini Eggs (crushed)

Method:
1. Unroll pastry and cut in half (this fits perfectly in half so save the rest for a pie or twists) 
2. Place on a lightly floured surface and put the chocolate bar in the centre 
3. Slice off four corners
4. Make slices evenly all the way down using the chocolate bar as a guide for spacing 
5. Fold the top and bottom of the pastry on the bar and start braiding from top to bottom till it’s fully covered in pastry 
6. Brush with egg wash (or milk)
7. Bake in hot oven for around 15-20 minutes at 180 C until golden and cooked 
8. Slice into bars and enjoy!

Mini Egg Cookies

Mini egg cookies from @mrsbfoodblog 🌈🍪

Ingredients:
125g Unsalted Butter
120g Light Brown Sugar
80g Caster Sugar
1tsp Vanilla Extract (or paste for a stronger flavour)
1 Large Egg
300g Plain Flour
0.5tsp Bicarbonate of Soda
1tsp Baking Powder
200g Mini Eggs
100g White Chocolate Chips

Method:
1. Cream together butter and sugar until smooth, then add in the egg and vanilla extract
2. Add in the flour and mix together
3. Next, add in the baking powder and bicarb a little at a time, ensuring this is distributed well and not in lumps
4. Add in the smashed mini eggs and white chocolate chips (tip from Lottie: smash them with a rolling pin on top of a tea towel)
5. Roll cookies into balls of around 100g
6. Top with a few extra mini eggs and then refrigerate the cookie dough for at least an hour before baking
7. Bake the cookies at 180 degrees for 13 minutes
8. Allow to cool, serve and enjoy

NYC Creme Egg Cookies

Mini egg cookies from @itslittlelauren (inspired by Jane’s Patisserie) 🐣🍪

Ingredients:
125g Unsalted Butter
100g Light Brown Sugar
75g White Granulated Sugar
1 Medium Egg
1tsp Vanilla
300g Plain Flour
1.5tsp Baking Powder
0.5tsp Bicarbonate of Soda
0.5tsp Salt
100g White Chocolate Chips
100g Milk Chocolate Chips
100g Mini Creme Eggs
3 x Creme Eggs

Method:
1. Start by creaming the butter and both the white and brown sugars together until smooth
2. Whisk in the egg and vanilla extract
3. Next, add the flour, bicarbonate and baking powder and mix again
4. Add the chocolate chips and mini eggs and mix well
5. Roll cookies into balls of around 130g (makes approx. 7)
6. Add half a creme egg into the centre and cover well
7. Freeze for at least 30 minutes and bake at gas 6 for 10-12 minutes
8. Leave to cool on the tray for 30 minutes. Enjoy!

Malteser Bunny Cheesecakes

Malteser bunny cheesecakes from @mrsbfoodblog 🐰🍫

Ingredients:
Small Easter Egg (refrigerate to begin so that they don’t melt)
Fat Free Plain Quark (250g)
Options White Hot Chocolate Powder (11g)
Your Choice of Biscuit Base (digestives, malted milk, lotus biscoff etc.)
Mini Malteser Bunnies
Chocolate Spread to Drizzle

Method (for one):
1. Mix 125g plain quark with 11g sachet of Options white hot chocolate powder
2. Crush up choice of biscuits in a bag with a rolling pin
3. Add the crushed biscuits to the small Easter egg
4. Top with the white chocolate quark mix
5. Drizzle with some chocolate spread of your choice
6. Top with a mini Malteser bunny! Enjoy!
