- 500g lamb fillet, cut into chunky pieces
- 3 potatoes, cut into chunks
- 4 carrots, cut into chunks
- 1 onion, chopped
- 1 tbsp all-purpose flour
- 2 beef stock cubes
- 250ml bitter ale
- 250ml beef stock
- 2 bay leaves
- 2 thyme sprigs
- 3 tbsp olive oil
- salt, to taste
STEP 1
Pat the lamb dry using a kitchen towel. Cut it in equal one and a half-inch cubes. Toss the lamb pieces into all-purpose flour.
STEP 2
In a slow cooker, heat oil and add the lamb pieces and cook for about 5 to 7 minutes until it gets a golden colour.
STEP 3
Take the lamb out of the pot and add chopped onions and cook for 2 to 3 minutes until soft.
STEP 4
Add diced potatoes and carrots and cook for three more minutes.
STEP 5
Add the cooked lamb pieces back into the slow cooker. Pour bitter ale, beef stock, bay leaves, thyme sprigs, beef stock, and salt.
STEP 6
Place the lid and let it cook for about 4 hours at low heat. Once the meat and vegetables are cooked, serve with rice or flatbread.
