- 6 lemons, plus extra slices to garnish
- 2 limes, plus extra slices to garnish
- 200g caster sugar, plus extra to taste
- 140g raspberry, plus extra to garnish
- Fresh ginger
- Loose handful fresh mint, plus extra to garnish
- Ice
STEP 1
Pare the zest from the lemons & limes with a peeler, removing as little white pith as possible – cut away any pith you can from the strips.
STEP 2
Juice the lemons & lime.
STEP 3
Grate a small amount of ginger.
STEP 4
Mix the juice, lemon & lime zest, sugar, mint, grated ginger and raspberries with 1.2 litres of boiling water.
STEP 5
Leave to cool, then sieve, pressing through juice with the back of a spoon.
STEP 6
Add sugar to taste and chill in jugs.
STEP 7
To serve and garnish, add a lemon & lime slice, raspberries, lots of ice and sprig of mint.
STEP 8
Top Tip - Instead of using ice, freeze the raspberries for some ice cold fruit.
