
- 4 large peppers
- Choice of protein filling: beef, veggie mince, sausage, turkey
- Other filling: rice
- Cheese
- Tomatoes
- Onion
- Garlic
- Italian seasoning
- Olive oil
STEP 1
Preheat the air fryer to 150 degrees.
STEP 2
Cut the tops off the peppers and scrape out the membrane and seeds.
STEP 3
Brush the peppers with some olive oil, both inside and out. Place them in the air fryer and cook for 5 minutes.
STEP 4
Cook your filling. Whether you've chosen beef, sausage, turkey or a vegetarian alternative, the first step is to brown the meat/cook the vegetarian alternative.
STEP 5
To make it vegan, skip the meat and cheese or swap them with vegan alternatives.
STEP 6
Add your onion (as much as you like) and garlic to the pan to soften.
STEP 7
Cook your chosen rice according to the packet instructions.
STEP 8
Stir in your cooked rice, tomatoes or tomato sauce, and seasoning. Mix well and leave to simmer for 4 minutes.
STEP 9
Spoon your cooked filling into the peppers. Cook at 180 degrees for around 8 minutes.
STEP 10
Top the peppers with cheese (we like shredded mozzarella) and air fry for another 3-4 minutes, or until the tops are golden.
