  • 60g blue Stilton cheese
  • 40g walnuts, halved
  • 20g mixed seeds
  • 85g bag of watercress
  • 4 plums, stoned and sliced
  • 2 chicory, chopped
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard

STEP 1

Over a medium heat, dry fry the seed mix and the walnuts for 4-5 minutes. Leave them to one side and let them cool.

STEP 2

While the nuts and seeds are cooling, combine the olive oil, white wine vinegar and mustard in a small bowl. Whisk them together until their fully mixed.

STEP 3

In a large bowl, combine the plums, watercress, and chicory, and cover in the dressing. Toss the salad so the dressing fully covers it.

STEP 4

Divide the salad between four plates, then crumble over the cheese and the nuts and seed mix.
