  • 300g celery, sliced
  • 200g potatoes, peeled and cut into small chunks
  • 1 garlic clove, peeled
  • 500ml vegetable stock
  • 100ml milk
  • 2 tbsp olive oil

STEP 1

Pour the olive oil into a large saucepan and place it over a medium heat. Once the oil is hot, add the celery, garlic, and potatoes. Cook for 15 minutes, stirring regularly and ensuring the oil fully coats the ingredients. If you’re finding it hard to stop things from sticking to the pan, add a little water.

STEP 2

Add the vegetable stock and bring to the boil, then lower the heat and simmer for another 20 minutes.

STEP 3

Once all the ingredients are nicely softened, use a stick blender to puree into a soup. Pour in the milk and then blend again. Or, you could try using your Stealth Personal Blender.
