A spicy and delicious chilli con carne recipe in slow cooker

- ½ kg minced beef
- 370ml canned kidney beans, drained
- 370ml canned tomatoes
- 1 onion white, chopped
- 2 garlic cloves, minced
- 120ml beef stock
- ¾ tsp Worcestershire sauce
- 1 tbsp olive oil
- 3 tbsp tomato paste
- ¼ tsp brown sugar
- 1 bay leaves
- 1 tsp oregano
- 1 ¼ tsp cumin
- 1 ¼ tsp chilli powder
- 1 tsp smoked paprika
- ¾ tsp salt
- ½ tsp black pepper
In a Dutch oven, heat olive oil at medium heat. Once the oil is hot, add the beef mince and cook for a minute while stirring.
Add oregano and cumin and cook until the mince gets brown colour.
Add minced garlic, tomato paste, chilli powder, smoked paprika, black pepper, brown sugar and salt. Mix well.
Pour the beef stock and scrape off the bits using a wooden spoon.
Add chopped tomatoes, Worcestershire sauce, kidney beans, bay leaf. mix and cover the Dutch oven with a lid,
Let it cook for about 8 hours at low heat. Once done, garnish and freshly chopped coriander and serve alongside rice.
