- 1 onion, finely chopped
- 1 garlic clove, crushed
- 400g can of chickpeas, drained and rinsed
- 1 egg, beaten
- 2 tbsp sunflower oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried mixed herbs
STEP 1
Heat half of the oil in a large pan, then turn the heat down low and add the onion and garlic. Fry for 6-7 minutes until they’re nice and soft. The 28cm frying pan from our handy and stylish Retro 5 Piece Pan Set is a perfect choice for this recipe!
STEP 2
In a large mixing bowl, combine the chickpeas, cumin, and coriander, then add in the garlic and onion. Break the mixture down by mashing it with a fork. Keep going until the chickpeas are completely broken down.
STEP 3
Stir in the parsley and mixed herbs, then add the egg. Combine the mixture with your hands until it has bound together fully.
STEP 4
Form the mix into 6 balls and then flatten slightly into patties. Add the remaining oil to the pan and then fry the 6 patties on a medium heat for around 6 minutes, flipping halfway through. They should be a nice golden-brown colour with a firm texture.
