Refreshing Fruit Cup Mocktail

- 120ml sparkling clear lemonade
- Handful of frozen berries
- 1cm slice of cucumber
- Sprig of mint
- Handful of ice
Finely chop the mint and cucumber. Add 200ml of water to a small pan – perhaps using one of the pans from our elegant and glamorous Swan Retro 3 Piece Saucepan Set – and bring to the boil.
Add the mint and cucumber and then take the pan off the heat and leave it for two minutes.
Add a small handful of frozen berries – choose your favourite berries or pick a mixture. Wait a minute or two for them to defrost slightly, then use a spoon to gently crush them.
Strain the mixture through a sieve. This recipe will make enough for four drinks, and can be kept in the fridge for 24 hours.
Pour 40ml of the mixture into a tall glass, along with a handful of ice. Add the lemonade, along with a few more frozen berries to garnish.
