Simple mozzarella salad

- 125g buffalo mozzarella, drained and torn into small chunks
- 100g baby spinach
- 100g sun-dried tomatoes
- ½ cucumber, cut into ribbons
- 1 yellow pepper, deseeded and cut into strips
- 2 tsp pumpkin seeds
- 2 tsp balsamic vinegar
- 1 tbsp olive oil
Once you’ve chopped your veg, combine them with the spinach and sun-dried tomatoes in a large bowl and toss. If you’re struggling to get nice thin slices, why not invest in a Swan 5 Piece Knife Block? After all, a chef’s only as good as his tools!
Divide the salad between two plates and scatter the mozzarella and pumpkin seeds over the top. Drizzle the balsamic vinegar and olive oil over the top and serve immediately.
