Slow Cooker Sausage Cassoulet

  • 12 sausages – choose your favourites, but herby Cumberland sausages work very well
  • 200g bacon lardons
  • 400g chopped tomatoes
  • 400g butter beans, drained and rinsed
  • 400g haricot beans, drained and rinsed
  • 2 onions, finely chopped
  • 2 celery sticks, finely chopped
  • 2 garlic cloves, crushed
  • 200ml white wine
  • 200ml chicken stock
  • 1 tbsp caster sugar
  • 1 tbsp red wine vinegar
  • 1 tbsp smoked paprika
  • Handful of fresh thyme, roughly chopped

STEP 1

Before you begin, set the slow cooker to low so it has time to heat up. You’ll need at least a 5-litre capacity for this particular recipe – our 6.5 litre Retro slow cooker is an ideal choice, not least because of that classic, elegant style it can offer! If your slow cooker is smaller, you can simply reduce the quantities and make fewer servings.

STEP 2

While your slow cooker is heating up, add a little oil to a frying pan over a high heat. Once the oil has heated up, fry the sausages. They only need to be browned on each side rather than fully cooked through, as they’ll continue to cook alongside the rest of the cassoulet in the slow cooker. Once they’re nicely browned, set them aside.

STEP 3

Now, add the lardons, onion and celery to the pan and turn the heat down to medium. Cook for 8-10 minutes until the onion is fully translucent and the lardons are nice and crisp.

STEP 4

Add the garlic, paprika and thyme and continue to cook for another 2-3 minutes, stirring frequently. If the herbs or spices start to stick, you can add a little water.

STEP 5

Pour the wine into the pan and simmer for around 10 minutes – you want the wine to have reduced by about half. Be sure not to have the heat too high; a gentle simmer is best.

STEP 6

Once the wine has reduced, add in the tomatoes, beans, stock, sugar, and vinegar. Stir thoroughly to combine.

STEP 7

Transfer the mixture to the slow cooker and add the sausages back in. Cover and cook on low for around 8 hours. The beans should be nice and tender, and the sausages fully cooked through.
