- 175g sugar
- 1 litre of water
- 400g strawberries, hulled and quartered (plus optional extra strawberries to serve)
- 200ml freshly squeezed lemon juice (approx. 4-5 lemons)
- Ice (to serve)
STEP 1
Add the sugar and 1 litre of water into a saucepan over a medium heat, stirring until the sugar has dissolved.
STEP 2
Once dissolved, remove from the heat and leave to cool completely.
STEP 3
Put the strawberries in a blender and blitz to a purée.
~ strain through a fine mesh sieve to remove seeds if preferred.
STEP 4
Pour the strawberry purée into a large jug with the sugar water and add in the lemon juice. Stir to combine.
STEP 5
Pour into glasses filled with ice and serve with whole strawberries as garnish if you like.
*Will keep chilled for a day*
