  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cups corned beef, diced
  • 1 lb. russet potatoes, diced
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 2 tbsp fresh parsley leaves, chopped
  • Black pepper, to taste
  • Salt, to taste

STEP 1

In a lightly greased baking tray, add diced potatoes in a single layer.

STEP 2

Drizzle olive oil on top and sprinkle dried oregano, thyme, and basil. Season generously with salt and black pepper. Toss well to combine everything.

STEP 3

Place the baking tray in a preheated oven for about 20 minutes or until the potatoes turn golden and are crisp at 400 degrees F. Once done, set these aside.

STEP 4

In a skillet or saucepan, add butter and place it on medium heat. Once the butter melts, add onion and garlic. Sauté for about 3 to 4 minutes until they turn translucent.

STEP 5

Add diced corned beef and stir continuously for about 3 minutes or until the beef gets a color.

STEP 6

Add the cooked potatoes and Worcestershire sauce. Cook for five more minutes and season generously with salt and black pepper.

STEP 7

Serve by garnishing with freshly chopped parsley. Enjoy.
