Vegetarian Cottage Pie

  • 4 medium potatoes
  • 80g soft butter
  • 90ml double cream, hot
  • 1 tbsp olive oil
  • ½ onion, finely diced
  • 2 sprigs of thyme, leaves
  • 1 carrot, finely diced
  • 2 cloves garlic, finely chopped
  • 100g chestnut mushrooms, finely chopped
  • 250-300g cooked lentils
  • 250ml vegetable gravy
  • Salt and pepper to taste

STEP 1

Grab yourself a large saucepan and boil your potatoes in here alongside lightly salted water. Cook until the potatoes become soft. Drain fully and set aside for a few minutes.

STEP 2

Once done, mash up the potatoes and mix with cream and butter. Season with salt and pepper.

STEP 3

Preheat the grill to 190 degrees Celsius and attach a deep pan plate.

STEP 4

Cook the garlic, carrot, oil, thyme and onions for around 6 minutes whilst stirring to avoid sticking and burning.

STEP 5

Add the mushrooms and cook for a further 6 minutes.

STEP 6

Place the gravy and lentils and cook for another 3 minutes. Sprinkle over this with salt and pepper to taste.

STEP 7

When completed, turn off the grill to enable it to cool.

STEP 8

Gently cover the mashed potatoes over the lentils and smooth it out.

STEP 9

Using a fork, create symmetrical lines over the top to help enable some texture to the food.

STEP 10

Grab some baking paper and place this over the top.

STEP 11

Heat the grill to 160 degrees Celsius for up to 20 minutes until cooked through.
